Establecimientos San Ignacio S.A. (ESISA) has been producing dairy products for more than 85 years, with the mission of being a benchmark in the food industry — providing safe, authentic products that meet the specified quality standards and consumer needs, in full compliance with current regulations.

The vision of ESISA is to achieve continuous growth through teamwork and the individual and collective commitment of all company personnel, strengthening its position in both the national and international markets. To this end, ESISA — through technological innovation, ongoing collaboration with suppliers, and continuous improvement of all processes — renews its goals every year to achieve and maintain the highest quality standards, ensuring the satisfaction of its customers and consumers.

Agencies and Certifications

ASSAL (Santa Fe Food Safety Agency) The Santa Fe Food Safety Agency regulates and oversees food safety in the province of Santa Fe, Argentina. Its goal is to ensure that food products comply with established safety and quality standards.

The National Service of Agri-Food Health and Quality (SENASA) is Argentina’s official agency responsible for regulating animal and plant health, as well as food safety. Its primary role is to inspect, certify, and control the quality of agri-food products to ensure their safety. San Ignacio’s facilities are authorized by SENASA. Scope of authorization:

The HACCP system (Hazard Analysis and Critical Control Points) is a preventive approach to food safety that identifies, evaluates, and controls biological, chemical, and physical hazards in food production. It is widely recognized worldwide and mandatory in many food industries.

EU Certification Our Dulce de Leche production plant is authorized to export to the European Union (EU), meeting the highest standards of quality and food safety. Certified Product:

BRCGS (British Retail Consortium Global Standards) A globally recognized certification system that establishes strict food safety standards and is endorsed by the Global Food Safety Initiative (GFSI). Certified Product:

FDA (U.S. Food and Drug Administration)
The FDA is the U.S. government agency responsible for protecting public health by regulating and supervising the safety of all food, drugs, and cosmetics sold in the country. Being FDA-approved means that a product meets the highest standards of safety and quality.

FSMA (Food Safety Modernization Act)
A U.S. FDA regulation that aims to improve food safety through a preventive approach rather than a reactive one. It establishes strict requirements for the production, distribution, and importation of food products.

Complying with FSMA means:
Implementing rigorous preventive controls at every stage of production.
Having a validated and documented food safety plan.
Ensuring that our entire supply chain — from source to packaging — meets the same safety standards.
